pancakes

Warm pancakes with butter and maple syrup or peanut butter and kaya, fruit jam....anything you fancy; is another breakfast choice that is simple to prepare. This recipe yields 6 pancakes enough for 3 persons.

Ingredients 
(this is a basic batter recipe to which you may add mashed bananas or dried fruits....etc it's up to you)
4 medium sized eggs
1 1/2 tablespoons white sugar
1 1/2 measuring cups all-purpose wheat flour
250 ml milk (I'd used milk chocolate straight from a packet, you don't have to; white milk is fine)

Method

1. Separate the egg yolks from the egg whites - into two separate mixing bowls


2. Add sugar to egg whites and beat until it becomes white and stiff (using an electric mixer is faster but if you do not have one, beat manually with a fork or metal whisk)


3. To the egg yolks, add shifted flour and milk; mix well (this is also where you can add any mashed bananas....etc)


4. Pour the batter into the egg whites, fold in and mix well but do not beat 


5. Heat a pan and grease it with just a teaspoon of corn oil


6. Lower down the heat and use a large soup ladle to scoop a full amount of the pancake batter and pour into the pan


7. Once the sides of the pancake start to firm up (you can also see a slight browning) and bubbles forming on the top, it's ready to be turned over by using a metal spatula. Cook the other side another minute, pressing it down with the spatula, and it's done... 



8. Finish cooking the rest of the pancakes.....that's it, they are ready to be served!
