fruity-chocolate squares

This recipe is from a friend. I tried it out with a little variation and will just call them fruity-chocolate squares....it's a sweet treat to go with tea or coffee after dinner!

Ingredients
1 measuring cup rolled oats
1 3/4 measuring cup all-purpose wheat flour
1 measuring cup brown sugar
1 measuring cup butter, softened
1/2 teaspoon salt
1 chocolate bar, chopped
100 gm fruit jam (use any of your favourite fruit jam) tip : use one that is slightly tangy to balance off the sweetness of the chocolate

Method

1. In a bowl, combine the oats, flour, sugar, butter and salt with a tablespoon. Then use your hand to make into a dough. 


2. Grease a 20 cm x 20 cm cake tin with corn oil and lay a baking paper inside the tin


3. Divide the oat dough into 2 equal portions. Use one portion of the dough to spread evenly on the bottom of the tin; pressing it down firmly, making sure it is compact. Then spread the fruit jam evenly on top of the dough.


4. Spread the chopped chocolate on top of the jam. Then take the remaining portion of oat dough and create another final compact layer on top.


5. Heat oven to 170 degrees celcius and bake for 30 minutes or when it turns brown.


6. Leave to cool and then use a sharp knife to cut into squares. Keep in an airtight container. Best to refrigerate before serving.
